I've added a new shift to my department, and given my employees permission to work it, but it doesn't show as an option when I try to assign the shift?

Once a shift is added and permission given, you need to 'demand' the shift; this is covered in the UPK Manual, under "Bid Line Maintenance - Period Demand".
